Banana & Sweet Potato Fritters

A couple of weeks ago I met with some wonderful spouses of Charlie Co. from TBS that also relocated to the Camp Lejeune area temporarily. It was really nice to catch up and hear from everyone! Also, seeing familiar faces is always a plus, as this was soon after we moved down here. We went to Yana's, a wonderful retuaraunt in Swansboro, maybe 40 minutes east. It was a sweet little town right on the water! And Yana's was amazing - the food was good, but my favorite part were their famous fruit fritters. Fritters, in this instance, consist of mashed up fruits mixed with flour, and a little bit of baking soda and salt. So it's basically deep fried fruit, that taste much like a funnel cake (It reminded me of the Texas State Fair - fried everything!!}. Simply wonderful. {Oh, and it's a really awesome way to use up your bananas just right before you have to throw them out before they go bad!}

I was really craving these earlier, but didn't want to go out to the actual resturaunt. So I found a recipe and went to the grocery store.....

Here is what I came up with, and a recipe to go along {It's really been too long since I've put up a recipe!}

Banana Fritters!

 
8-9 medium ripe bananas
{those with blackened skins are perfect!}

1 cup flour

3/4 teaspoon baking powder

1 teaspoon of salt

Oil for frying
 
 
Mash up the bananas into a pulp, a potato masher works well {or whichever fruit you choose - I also made them with sweet potatoes and it turned out very well!}.
 
Add the flour, baking powder, and salt.
 
Heat oil {about 2 inches deep} on medium heat
 
Use large spoon to scoop and drop the batter in the oil {gently, and low to the oil..you don't want hot oil to splatter everywhere!}
 
Fry a few at a time until golden brown.
 
Remove from the fryer when done, and enjoy!

**Fritters are very similar to funnel cake in make and form..And they are WONDERFUL because the batter is infused with FRUIT!!! Very awesome!!
 


**Note: Best enjoyed with powdered sugar! You can also drizzle honey or even chocolate syrup on them. The sky is the limit!
