Nutella White Chocolate Chip Brownie Bites

I finally made something from Pinterest...Yipee!
You have GOT to try this..
 
Nutella Brownie Bites. Yum!
The recipe is SO simple - you cannot turn this one down.
Only bummer {perhaps} is that it calls for an entire container of Nutella (the smaller size) so you will definitely have to buy extra at the store!
 
 
Three simple ingredients:
1 cup Nutella
10 tbsp. flour
2 eggs

 
Combine.
 
 
Scoop into mini cupcake liners
{Here I added 3 white chocolate chips at the top of each}
 
 
Bake @ 350 for around 15-20 minutes

 
Viola! You are done!
Now enjoy your tasty treat, and don't forget to thank that Italian company for creating this marvelous chocolate hazlenut spread :)

Okay ladies! I know I have been very MIA lately, but there's good reason for this. I've been crazy busy with school, volunteering, and of course running errands...Lots of them. Things have been hectic, as you may have seen in my last post, but it's still been fun. I can't wait for summer...

Here are some things I've been lovin' lately!!!

Ann Taylor Loft logoLoft by Ann Taylor. It's official. I am in desperate need of modest, cute, womanly, teacher clothes. Seriously - I need to get onto that spring cleaning and fix my wardrobe! Tonight with the LINKS ladies we went to the local Loft by Ann Taylor store- I LOVED it!!! There was a stylist and we had the entire store to ourselves - heaven. Don't forget the chocolate covered strawerries to go along with it.. We all tried on like crazy, and I finished with about 30 items - dresses, skirts, heels, sandals, jewelry, pants, jeans, etc. Seriously I tried on the whole store. Only left with 3 - get that - THREE - clothing items. I don't understand how I was able to get rid of so much. We got a wonderful discount on everything, and Marshall was surprised when I came home with so little. I should have gotten more - this is now my go-to store for teacher clothes! I seriously needed this!

That cute Disney purse. Lately my go-to purse that I bought for my brother's graduation this time last year has officially passed away - the strap broke, and I already tried everything I could think, theres no hope. So I've been using my Disney purse. Too cute.

Pinterest. DUH. Since I got home from Loft, I've been switching between browsing Pinterest for teacher clothes and homework. I need to take a good, serious look at my closet soon and decide what I need and don't need. Spring cleaning hasn't officially started for me yet, but it will soon. I need professional clothes - help me, Pinterest!


Planning out my final semesters of undergrad. Once I got home from the wonderful event at Loft earlier, Marshall started talking to me about our future. Which desperately made me want to finish school already, like now! I'm trying to see what ways I can meander to graduate this December, just to be done with it.I mean, I already have everything planned out, but if I forgo student teaching and just be an assistant teacher spring, I'll be makin' some money. And with all the volunteering I already do at the elementary school, that might be okay.. Just so, you know, we can prepare for starting a family and all that. And just so I can be done with school already...

Prepping for SUMMER. With a wardrobe wake-up call and desperate planning for school, I am too beyond excited for summer. My favorite season. First, I need to find a new swimsuit, A modest, one-piece swimsuit, Any store suggestions, ladies? Regardless, summer can't come fast enough! Less classes, family visiting, getting teacher ceritifed..Oh yeah, and we are blocks from the beach, so I'll basically be walking to the sandy shore each day!

But Wives of Faith is an organization for Christian military wives to have fellowship and a network where you are understood, you know, cause of this crazy military life. I met with the leader of the local Oceanside chapter this past Friday, and it was wonderful. We talked about our walks with God, where we are from, how long we're here - basically what's going on, a get to know eachother thing. I really needed that, some girl talk about God and military life. I've really been itching for fellowship here, and other than LINKS, I don't know any other lovely ladies here, since Marshall is just moving to a new job and is still meeting people.

school overload!

It's official. I registered for the PRAXIS II Elementary Education Content Knowledge this July!!!! Long title, I know, but it's a teacher certification exam, and is widely being accepted at more and more districts. It's also required to pass before applying to my student teaching semester this upcoming spring. If you're like me, not living in your home state, this certification is generally accepted in lieu of the state certification for where you reside temporarily. Perfect for military!


This is the exact prep book I'm using.. I suggest if you are taking anything
of the PRAXIS series, to buy the book from REA. So thorough, and the best I've seen from reviews!

It's in San Diego, way early in the morning. Which means it's going to be a looong day, but it will be worth it. (It's only a 2 hour exam, but the drive and early wake-up call will be brutal!) I have my test prep book I've been looking at (above), but I've been so overwhelmed with other duties lately that I'm really behind in studying...But it's not that bad yet since I still have a few months to study for it! And it's core subject, so it's basically a review from the past x years of schooling I've gone through.

In other news, I finally finished registering for the summer! I'm taking 3 classes all summer, and I still need to order books.. Liberty is great because they appreciate military, so if you are military-affiliated you get a book voucher..Yipee! Except I just added another course than before, after contemplating it, so the voucher needs to be resent or re-applied in order for me to take advantage of basically free money for books..$300 to be exact. What a blessing! I think I'll have to wait till next week since the offices are closed today for some reason, so I'm cutting it really close to the start of classes in only 2 weeks, which worries me... In case you wanted to know.

I'm basically over 80% done with my degree and will still be graduating May 2014..In exactly one year I will be prepping for my last finals EVER! I'm of course student teaching next spring but will also be taking a math class and elective on the side in order to graduate on time... It will be crazy but it will be so worth it!

Also, did anyone know that this week is volunteer appreciation week? Look at this sweet poem I received from the Kindergarten teacher I volunteer with :)



And back to the title of the post.. I am officially in school overload. I took on a whole lot this term, with 5 classes in only 8 short weeks, all at once. It's overwhelming, and that combined with volunteering at the elementary school, combined with volunteering with LINKS on base, combined with still unpacking from our move 2 months ago, combined with doing all the housework and errands while the stud is at work..... is overwhelming. And exhausting. The past few weeks I have been cutting it way too close to the deadlines Monday and Friday nights, and Marshall finally told me that there is no way he is allowing me to register for so much, while doing so much, at once, ever again!! I took that to heart and spaced out my classes this summer in the various terms, one 16 week, one in June, and one in July. So at one time I only have 2 classes max, rather than 5 classes.

Now for something completely unrelated to school...
 
This afternoon I will finally be meeting with the local Wives of Faith group here in Oceanside! I am too excited! We will be studying Faith Deployed by Jocelyn Green, and I'm thrilled to finally be exploring that book. I also have the 2nd one, but I've seriously only gotten to a few pages since I've been working like wonderwoman over here. I am hoping there is a good turnout so I can mingle with other military spouses here, because I seriously haven't had a chance to just meet and have fellowship with other spouses on a regular basis. Remember, I'm so overwhelmed!
 
I can't wait for summer..Not as many classes, fellowship, the beach, getting certified, time to not be overwhelmed... Oh, and did I mention my birthday, our anniversary, and Marshall's birthday are all in the summer? Yeah, it's basically our favorite season :) Don't forget that my mom is visiting - Sea World & Disneyland, here we come!!

I can' believe it's already Wednesday..Again! Time is really flying by and before we know it, it will be summer. Sweet summertime. Anyway, here are a few things on Pinterest lately that make me smile... Gotta be quick because once again, I absolutely have to get back to homework!!

What's one lesson God is teaching you right now?

Lately I've had a lot of trouble with being content. You know what I mean. I can't just sit down and relax at the end of the day, after a long day's work, I have to be doing something, anything! This something turns in to homework, cleaning like mad, working on my blog, reading, watching tv, or even baking at 2 in the morning. I am not content right now just going to bed at a decent hour with my husband. And it's really frustrating for the both of us.
 
Yesterday Marshall sat me down and we seriously talked about this - why I'm not falling asleep at 9pm with him every day. You know, early to bed, early to rise! And what did we find? I feel a little overwelmed.  I feel like I can't trust myself to get all the chores, errands, and homework done the next day, so I feel like I absolutely have to get a head start on it at night. This isn't right. We need to go to bed together every night, I can't stay up doing my own thing, because I get 10 hours of daylight each day to do just that, whatever is on my to-do list for the day.
 
The lesson God is teaching me right now? Relax. Breathe. Enjoy quiet time with my husband and stop feeling like I need to be superwoman. Go to bed at a  decent hour, so I can get up at a decent hour, and get even more done in the day. Listen to Marshall. I've really had trouble listening to him in this, since things have been really stressful with midterms just past me, and my ears have been hurting in hearing this reality.
 
Last night after our talk, I feel it in my heart to stop stressing about what needs to get done each day because lately that's been taking away from our relationship. God is teaching me to cool down, and focus on Him in our marriage. Not on the to-do or honey-do list, but to focus on us slowing down and to rely on Him. To be content.
 
I know this is something I will continue to struggle with.. We've been married for just over a year and a half, 2 years this August. Marriage is fun, it's a blessing, but it's also stressful at times. It's going to take time. We just need to look to God in our struggles and become content rather than stressed, rather than focusing on the to-do's of life. Everything we desire can be found in Him. That's my current lesson.

Don't get me wrong, California is beautiful, but nothing beats home.
 
Here are a few things I'm missin' of the lone star state...
 
 
Giant awesome rest stops/gas stations, like Bucee's and various Smokehouses.
They have everything under the sun: it's like a condensed grocery store/gas station/car wash/rest stop all in one!

 
Crossing the Louisiana/Texas state line... The joy of knowing that I am in Texas.

 
Texas beaches...We miss you Galveston!

 
Touring the USS Cavalla and USS Stewart, both WWII submarines forever in port on Pelican Island, Galveston, Texas.

 
Pleasure Pier...When a hurricane destroys a historic hotel, 4 years later you get a theme park!

 
Tiki Island, my parents' temporary residence.. Beautiful.

 
Seeing palm trees all up and down the Gulf. And don't forget the sunsets.

 
Wide open roads in a Ford....No human life in sight. Bliss.

Oh and don't mention that Marshall is constantly looking at land for us to buy during practically all of his free time. Each week he even emails me links to properties he likes to check out! We have found some really good sites out in east Texas much like what we are wanting. We can't wait to buy land in a couple years, build/remodel a house, and plant roots. What a dream!
